Big Dill Energy: The Pickle Michelada Recipe

You already know pickles are having a moment. Picklebacks, pickle pizza, pickle-flavored everything. So it was only a matter of time before the michelada got the pickle treatment. And honestly, it might be the best version of all.
Here is the thing about a pickle michelada: the brine does half the work for you. That salty, vinegary punch is exactly what a michelada wants. You are not fighting the flavor, you are just turning it up.
What you need
- 1 Big Dill Chela Stix
- 1 cold light Mexican lager (Modelo Especial, Pacifico, Tecate, whatever you like)
- Ice, a lot of it
- 1 oz dill pickle juice straight from the jar
- 1 lime wedge
- Optional: chamoy and Tajin for the rim
One important note on the pickle juice: dill, not sweet. Sweet pickle juice in a michelada is a crime. Use the brine from classic dill spears or dill chips.
How to make it
- If you are rimming the glass, do that first. Swipe chamoy around the rim, then dip it in Tajin. Set it aside.
- Fill the glass with ice. Be generous, a warm michelada is a sad michelada.
- Rip open the Big Dill stick and pour it in.
- Add the pickle juice and squeeze in the lime wedge.
- Pour the beer in slowly, tilting the glass so it does not foam over on you.
- Stir gently, taste, and adjust. More pickle juice if you want it punchier, more lime if you want it brighter.
That is it. Five minutes, one stick, zero bottles of mix taking up space in your fridge.
Tips to get it right
Go light on the beer at first. You can always add more beer, but you cannot take it out. Start with about three quarters of the bottle or can, taste, then top it off.
The pickle spear garnish is not optional. Okay, it is optional. But drop a dill spear in there and it goes from a drink to a whole situation.
Keep everything cold. Cold glass, cold beer, cold pickle juice. Micheladas live and die by temperature.
Batch it for a crowd. Multiply everything by six into a pitcher, stir, and let people pour over ice. Game day solved.
